Who doesn’t love Ruth’s Chris Steakhouse? They may serve delicious steak but their side dishes are to-die-for!We had dinner there a few months ago for Uncle Pat’s birthday. Whenever we go, two orders of au gratin potatoes will most certainly be ordered. This is NOT optional.

We decided, however, to really branch out and try something else on the menu this time.
I’m generally not a huge sweet potato fan on Thanksgiving, but my mom convinced me to share an order with her and try them out. Ruth’s Chris sweet potatoes are more like a dessert than a side dish – which clearly means that I am a fan! The perfect amount of sweetness in every bowl. 🙂

Ruth’s Chris Sweet Potato Casserole

Ingredients

  • Crust:
  • 1 cup brown sugar
  • 1/3 cup of flour
  • 1 cup chopped pecans
  • 1/4 cup butter (melted)
  • Sweet Potato Mixture:
  • 3 cups mashed sweet potatoes (you can use can to save time, drain)
  • 1 cup of sugar
  • 1/2 teaspoon of salt
  • 1 teaspoon vanilla
  • 2 eggs (well beaten)
  • 1/2 cup of butter (melted)

Instructions

  1. Combine brown sugar, nuts and butter in a mixing bowl. Set aside.
  2. Preheat oven to 350 degrees
  3. Combine sweet potato, salt, sugar, vanilla, eggs and butter in the order listed. Mix thoroughly.
  4. Pour mixture into buttered baking dish.
  5. Sprinkle the surface of the sweet potato mixture evenly with the crust mixture.
  6. Bake for 30 minutes. Allow to set for about 30 minutes before serving.
