We all need cheesy bread in our life. I don’t care who you are or what diet you’re on. You need it. This is non-negotiable. I’m not saying you need this every night, but you do need this bread in yo’ life!

I made this recipe before I made the decision to be healthy for my new years resolution, but I must admit I still indulge once in a while – all in the name of mental health!

This bread is perfect for a family dinner side. Grab some fresh ciabbata bread from the market and throw her in the oven! It goes perfectly with Pasta Bolognese, which is another recipe I will be posting soon.

Cheddar and scallion bread


  • 8 ounces sharp cheddar cheese (coursley grated)
  • 6 ounces of butter, room temperature
  • 4 scallions, finely chopped
  • 2 cloves of garlic, chopped
  • salt and pepper
  • 1 (1 lb.) loaf ciabatta bread, cut in half horizontally)


  1. Place an oven rack in the center of the oven Preheat the oven to 400 degrees F.
  2. In food processor, combine the cheese and butter. Process until the mixture is smooth. Add the scallions and pulse until combined. Season with salt and pepper, to taste.
  3. Spread the cheese mixture on the cut sides of the bread. Place on baking sheet and bake for 10 to 12 minutes until golden.
  4. Cut bread into 1-inch thick slices and serve.
