This is will be my last soup post until fall, I promise. The soup craze has ended. The terrible photo above does not even come close to doing this soup justice.
I am still learning a lot about my camera and lighting. But although this is not the best picture, I can totally guarantee that if you try this recipe, you WILL make this soup again.
It´s a creamier, richer version of chicken and dumplings, just without as many veggies. It has a unique Italian taste that you won´t be able to resist! And best of all, it´s so filling that one bowl is definitely sufficient.
In case you´re confused by the crazy name,
gnocchi are various thick, soft dumplings that may be made from semolina, ordinary wheat flour, flour and egg, cheese, potato, breadcrumbs, or similar ingredients. (Wikipedia.com)
