Taco Salad | Crowned Creations

One of the best things about getting married is the instant access to an entire pool of family recipes. My husband’s family Christmas party is gargantuan. They would certainly pose a strong threat to my own family if there were ever a family Christmas party contest!

We all get together, exchange Christmas cards, eat great food, and take seemingly endless family photos. There are always so many things to choose from! Last year we decided on Mexican food.
When I walked in, the first thing I feasted my eyes on was a bright and colorful taco salad. I wasn’t very hungry at first so I thought a salad would be a good start. Little did I know it was going to be THE best taco salad my Mexican taste buds had ever experienced. All of the flavors worked perfectly together. It even had a bit of spice to it. I went back for seconds, then for thirds, and I’m embarrassed to say, fourths! The little crunch in each bite was simply delectable. I just had to have the recipe.

I called the creator of this glorious creation, Aunt Dianne, and she generously shared the secrets to her recipe. This is the perfect side dish to bring to a party. Try it out and let me know what you think!

Taco Salad | Crowned Creations

Taco Salad

Ingredients

  • 1 lb. ground beef
  • 2/3 cup water
  • 1 package of taco seasoning
  • 1 head of iceberg lettuce (chopped)
  • 2 cups of cheddar cheese
  • 1 can of kidney beans (drained and rinsed)
  • 1 can of corn
  • 2 cup chopped tomatoes
  • 1 cup of thousand island dressing (add more, if needed)
  • 1 cup crunched Doritos
  • 1 large avocado (cubed)

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef and drain excess fat. Stir in the taco seasoning, water and reduce the heat for about 15 minutes.
  2. In a large bowl combine the lettuce, cheddar cheese, beans, corn, tomatoes and dressing.
  3. When the meat mixture is done add it to the bowl.
  4. Top with avocado and crushed Doritos.
