Let me just start by saying that this burrito is THE bomb. My husband’s Kalua pork recipe is one of those gifts that keeps on giving – there are so many recipes you can create with it! I’ve decided that I’m going to create ten Kalua pork recipes to share with you. Prepare yourself for the first!

If you love Mexican food, but you’re over constantly making tacos for dinner, this is a superbly delicious option. To make it even better, I highly recommend washing this burrito down with a Pacifico. Carnitas burritos are also a great choice for a busy night, as you can make them in just 30 minutes if you have some leftover Kalua pork hanging out in your fridge!

Kalua Pork Burrito

Ingredients

  • Pulled Pork Recipe
  • 1 cup chopped cabbage
  • 1 cup chopped red cabbage
  • 1/2 cup shredded carrot
  • 1/2 cup Monterrey Jack cheese
  • 1/2 cup Salsa Verde
  • 1 cup of corn
  • 1 cup of black beans
  • 1/4 cup chopped onion
  • 1 T. cumin
  • minced garlic
  • olive oil
  • 1 tsp. salt

Instructions

  1. Heat a large saute pan over medium heat with the oil and chopped onions. Drain and rinse your black beans and add to your pan. Add your corn as well.
  2. Cook for 5 minutes or so and then add cumin to the pan. Season with 1 teaspoon salt or to taste. Cook for another 3 minutes or so, and then take off the heat to cool to room temperature.
  3. Shred kalua pork with two forks. Add about 3/4 cup of salsa verde to your pork. This is an estimate. You want the pork to be flavorful!
  4. To assemble, put two spoonfuls of bean/corn mixture, one spoonful of pork, chopped cabbages and a handful of cheese on each tortilla. Wrap your burrito nice and tight!
